    Banana Chocolate Chip Muffins

    Banana Chocolate Chip Muffins


    • Makes 24 muffins.

    Ingredients:

    - 1 teaspoon baking soda
    - 1 cup unsalted butter
    - 1 cup sugar
    - 1 1/4 teaspoon cinnamon
    - 3 whole ripe bananas, mashed
    - 2 large eggs
    - 2 cups flour
    - 5 tablespoons milk
    - 1 teaspoon vanilla
    - 1 teaspoon baking powder
    - 1/2 teaspoon salt
    - 1 cup chocolate chips

    Instructions:

    1. Cream butter and sugar together, then add the bananas.

    2. Mix in the rest of the ingredients and scoop them into a lightly greased muffin pan.

    3. Bake at 350F for 20-24 minutes.

      For those who like to use less fat, I’ve used half butter and half apple sauce when a recipe calls for butter. So for this recipe I would use one-half cup of butter and one-half cup of apple sauce. This rule can be applied to the fat content of pretty much any muffin recipe, whether it be butter, margarine or cooking oil. (this is also less expensive)
      I’ve also used a large tube cake pan with my muffin recipes for variety….

      I have an even simpler recipe-only 7 ingredients…but I may have to up it to 9-the addition of vanilla and cinnamon sounds divine!

      I love peeling the overripe bananas, putting them in a ziplock (my recipe calls for 4 or 5 so I do that many in one bag) and mashing them with my hand, sealing them, then tossing them in the freezer flat. They thaw in no time on the counter and no wasted bananas! It seems everyone eats bananas…until I buy 4 bunches at a time!

        teachermum – that’s a great idea for the bananas! I do that and sometimes I also cut the banana in chunks and freeze them for fruit drinks.
