    Cheese & Spinach Stuffed Shells


    • Servings: 3

    Ingredients:

    • 12 Jumbo Shells
    • 1/2 Onion, Minced
    • 10oz. Frozen Spinach, Thawed
    • 2 Garlic Cloves, Minced
    • 1 Pound Ground Beef
    • 1 Can Crushed Tomatoes
    • Salt and Pepper
    • 2 Teaspoons Oil
    • 2 Cups Ricotta Cheese
    • 2 Cups Mozzarella Cheese, Shredded
    • 1 Egg
    • 1/4 Cup Parmesan Cheese, Shredded or Grated
    • 1 Tablespoon Basil

    Instructions:

    1. Boil water and cook shells until they have just a bit of bite left to them (al dente).
    2. While the shells are cooking, cook onions and garlic in oil over medium heat – then add in the ground beef. Once the beef is cooked, add crushed tomatoes, salt, pepper and basil. Simmer on low, covered.
    3. Preheat oven to 375F. In a large bowl, mix together ricotta, spinach, mozzarella, egg, and parmesan.
    4. Once shells are cooked, rinse them under cool water so you can handle them without burning yourself. Fill the shells with the cheese mixture and place in a baking dish (give it a quick spray with non-stick cooking spray first).
    5. Cover shells with half of the meat sauce and then cover dish with foil and bake for 30-35 minutes. Serve with additional sauce on top.

      Oh my!! This looks so good! I will have to try this sometime soon!
      I have only one issue though……my fiance is allergic to spinach (which is very terrible because spinach is so good and he actually does like spinach) do you have any alternatives to the spinach part of this recipe?

    3. Oh yeah, he loves pasta! You could always fill some shells before adding the spinach for your boys, and then add the spinach for you. :)

      Does Elliot eat this? I wish I could make this but my boys would complain about the spinach…I wonder if I can adjust…..

      flo, i wasnt a big fan of spinach either for the longest time. now i can’t get enough of the stuff! thats for the website! *bookmarks*

      Thank you, very useful. I wasnt actually a big fan of Spinach for many years ( lie, I hated the stuff), but after shacking up with a vegan I kind of had to get used to it, and have gradually come to absolutely love the stuff. Spinach curry is now my absolute favourite! I recently found an entire spinach recipes website which is my new favourite site now, you should have a look!

      lol those shells are very filling! hubs and i can only eat a maximum of 4 shells each and then we are stuffed!
