Cheesy Mashed Potatoes

- 5 large potatoes
- 1/3 cup cream cheese
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 7 tbs. Butter
1. Boil potatoes until tender. Drain and add to large mixing bowl. Mash with a potato masher until no large chunks remain.
2. Add cream cheese, milk, butter, parsley and salt to potatoes and mix with a hand mixer on low for about 30 seconds.
3. Add shredded cheese and mix for another 30 seconds.
