    Crock Pot thyme Chicken


    • Servings: 2

    Ingredients:

    - 1 medium onion, minced
    - 2 large carrots, peeled and chopped into bite size pieces
    - 1/8 teaspoon pepper
    - 5 slices bacon
    - 4 boneless skinless chicken breasts, cut into halves
    - 3/4 cup chicken broth
    - 1/4 cup tomato paste
    - 3 cloves garlic, minced
    - 1 teaspoon thyme
    - 3 tablespoons flour

    Instructions:

    1. Cook bacon in a skillet over medium heat. Drain and crumble. Season chicken with salt and pepper.

    2. Layer ingredients in slow cooker in the following order: onions, bacon, carrots, garlic, thyme, pepper, chicken, and broth. Cover and cook on high for 4 hours.

    3. Remove chicken and vegetables to a plate. Ladle 1/2 cup cooking liquid into small bowl. Mix reserved liquid, tomato paste and flour until smooth. Return sauce mixture to slow cooker and stir. Add the chicken and veggies back to the sauce. Cover and cook for an additional 15 minutes or until thickened.

    4. Serve over mashed potatoes or rice.

      @Ashley… You don’t need to get a crockpot with built in timer. You could buy a simple timer for your outlet that you plug your crockpot into (like you’d use for turning on lights if you go on vacation, etc). Turn your crockpot on low and it won’t start cooking until the timer lets the current flow. If you put frozen chicken in the crockpot, it should be ok to sit for an hour or so on the counter before it starts cooking. The timer could also turn the crockpot off for you.

      The “crockpot” of the same brand name at costco is great. i just bought it for 49.99 it has a timer so it will automatically stop cooking and keep food warm. love it! also comes with bonus little dipper. both ssteel.

      I’d love the ease of crock-pot cookery…but I find everything is mush in fairly quick order, even on low! What kind of slow-cooker does everyone recommend. I had a Smart Pot that boiled something to mush in only 1 hour on LOW! And it got so hot on the outside that you couldn’t touch it. I took it back, but the next one did the same thing. I finally got a refund from Walmart (gave up). Thanks!

      Sounds delicious. We make something similar that you might enjoy. The basic recipe is here:

      Just substitute crock pot for “saucepan” and only brown the thighs (a couple of minutes each side on high heat) instead of 5 min each side. 6-8 hours later, it’s awesome. Just shred the chicken (it pretty much falls apart by then), stir, thicken a bit with some more flour paste or corn starch if necessary/desired. Serve over rice or whathaveyou.

      The wine really just deglazes the pan and cooks out. But if you wanted to avoid it chicken stock would be fine.

      This looks sooo good! I think I will have to make it on a weekend though, I can’t leave my crockpot cooking away for 9hours while I’m at work…I’d end up with very burnt chicken! Lol
