    Mini Donut Muffins


    • Makes 24 Mini Muffins

    Ingredients:

    • 1 3/4 Cup Flour
    • 1 1/2 Teaspoon Baking Powder
    • 1/2 Teaspoon Salt
    • 1 Teaspoon Cinnamon
    • 1/3 Cup Oil
    • 3/4 Cup Sugar
    • 1 Egg
    • 3/4 Cup Milk

    TOPPING INGREDIENTS:

    • 1/3 Cup Butter
    • 1 Cup Sugar
    • 1 1/2 Tablespoons Cinnamon

    Instructions:

    1. Combine all ingredients (except topping ingredients) together in a big bowl. Yes, every last ingredient. Stir only to combine. Do not over mix.
    2. Pour batter into muffin tins (sprayed with non-stick spray) and bake at 350F for 15-20 minutes. While you’re waiting for those to cook, melt the butter in a bowl. Combine the sugar and cinnamon in another bowl.
    3. Once cooked, dip warm muffins in melted butter, then roll in the sugar and cinnamon mix.
    4. You’re done! Try not to eat them all at once.

      thanks cassie these are awesome. My two boys(hubby & 17 year old) loved them in there lunches. Great easy little dessert!

      These mini doughnuts bring a new meaning to betcha can’t eat just one. I made 24 and froze half. I had to redo the recipe because the 12 I had made to eat were already gone in one evening :) AMAZING recipe..takes you no time at all to make.

      Today I am making these with my grandson. This will be the 3rd time making these and every time I have made them, I have used applesauce instead of oil. Here is my problem; I eat them all within a day lol so delicious, thanks Mrs. J!
