    Broccoli & Cheddar Soup


    • Servings: 3

    Ingredients:

    • 6 Cups Broccoli
    • 1/2 Cup Flour
    • 6 Cups Chicken Broth
    • 2 1/2 Cups Grated Cheddar Cheese
    • Bacon, Crumbled (Optional)
    • 1 1/2 Cups Milk

    Instructions:

    1. Chop broccoli finely and cook until tender. Set aside.
    2. In a large pot, combine broth and milk. Slowly whisk in the flour and then cook over medium-high heat until it starts to boil.
    3. Add chopped broccoli and reduce heat to medium.
    4. Cook 4-5 minutes and then add cheese. Once cheese has melted, you’re done!
    5. Serve, topped with bacon if you wish.

      i make a soup similar to this. i make it differently though. the big difference is i use any and all vegetables in the house at the time. (including frozen and leftover veggies) i start with a large pot about half full of water peel and cut up 2 or 3 potatoes, 1 or 2 carrots and put them in first because they take the longest to cook. i continue to add veggies in the order i think will cook longest to shortest, so next i might add some turnip, sweet potatoes, squash, stalks of broccoli (peeled, i find the outside very tough) cauliflour, peas, corn, brussel sprouts, spinach, onion and garlic. (or any combo that i have on hand) (hold off on adding the flourets of broccoli until very last.) before adding the flourets i cook until everything is tender, then puree it with my hand mixer. then add the flourets (cut up quite small). i simmer it until they are just cooked, add butter, salt and pepper to taste and sprinkle cheese on the top as i serve it. its great on a cold damp or snowy day. when i eat this soup i like to add a few tablespoons of uncooked stovetop dressing while i’m eating, ( it gives it tons of flavor,) instead of crackers or slices of bread

      my son who is a fussy eater eats this and doesn’t realize he’s eating all those vegetables

      Just made this soup, it was good and easy. I added extra cheddar as the sharp taste just wasn’t there. I think next time I may saute some onions too. What a delicious soup to use up cheap broccoli with!:) Thanks Cassie!

      Reduce the flour, reduce the milk and add more flavour:

      Dice up small onion, sautee until see through. Add 2 tablespoon of flour in sauteeing onions. Add peeled and diced med potato, add to onion, add broth and simmer. Add diced brocolli. Simmer until broc soft. Dont boil brocolli or the colour goes out of it. Add cheese. Blend up with hand blender. Add 1 cup milk. Dont boil again or milk might split. Add crumbled bacon. Freezes well.

      I wanted to make the recipes as is but my husband who used to be a sous chef made these suggestions.

      I have been making this soup for years but being English, we call it Broccoli and Stilton soup so yes, other cheeses work perfectly and I always feeze leftovers.

    7. Alison: It should be fine to freeze, but I have not done it myself. There’s never any extra left over when I make it! :P
