
Ingredients:
- 4oz. Semisweet Chocolate, Chopped Into Small Pieces
- 3/4 Cup Sugar
- 2 1/2 Cups Unsweetened Shredded Coconut
- 1/4 Cup Unsweetened Cocoa Powder
- 1 Teaspoon Vanilla Extract
- Pinch of Salt
- 3 Egg Whites
Instructions:
1. Heat oven to 350F and line a baking sheet with parchment paper.
2. Bring a small pan of water to a boil. Reduce heat and simmer. Place chocolate in a small bowl and set over the boiling water until chocolate is melted. Set aside.
3. In a large bowl, combine cocoa, sugar, chocolate, coconut, egg whites, vanilla and salt. Mix well.
4. Form 2 tablespoon loose haystack piles and place on prepared baking sheet.
5. Bake 12-14 minutes.
Makes 2 dozen.
