    If I want Elliott to eat chicken, I make chicken nuggets, chicken strips or these delicious parmesan chicken bites. He will absolutely NOT touch chicken cooked any other way. Weirdo! So every so often I make these chicken bites, because – trust me – they are so much better than the boxed variety!

    Parmesan Chicken Bites


    • Servings: 4

    Ingredients:

    1 cup bread crumbs
    2 boneless, skinless chicken breasts (cut into bite-size pieces)
    1/4 cup butter, melted
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup parmesan cheese

    Instructions:

    1. Preheat oven to 350F. Line a baking sheet with foil or parchment paper for easy cleanup.

    2. In a medium dish (I use a pie plate), mix together the salt, parmesan, pepper and breadcrumbs. In another medium dish, pour in the melted butter.

    3. Dip chicken into butter and then the breadcrumb mixture. Place on a baking sheet and bake for about 30 minutes or until chicken is cooked through.

      My kids love these! We use eggs to dip the chicken in instead of butter and it’s just as good.

    2. Amanda: Yes, these freeze well, but I wouldn’t keep them in the freezer longer than a few weeks, as I feel that they start to lose their flavour after that.

      I have a question…. do these freeze well? have you tried to freeze them at all?

      Made these tonight a little time consuming but they were soooo yummy my kids and hubby gobbled them up I will definitely be making them again :)

      This looks great! I too have two fussy kids who won’t touch chicken unless it’s in some sort of a nugget form, I’ll have to give this recipe a try.
