    Twice Baked Potatoes


    • Servings: 4

    Ingredients:

    - 4 large potatoes, washed
    - 1/4 cup vegetable oil
    - 3/4 cup shredded cheese
    - 1/2 cup sour cream
    - 2 green onions, sliced
    - 4 pieces of bacon, cooked and crumbled

    Instructions:

    1. Pre-heat oven to 450F. Rub potatoes in vegetable oil and place on a baking sheet. Bake for about 1 hour or until soft.

    2. Slice cooled potatoes down the centre and scoop out the insides. Place the insides in a bowl and add sour cream, 1/2 cup cheese, green onions and bacon. Mix together.

    3. Fill potato shells with potato mixture. Sprinkle with cheese and bake for 10-15 minutes or until cheese is melted. Enjoy!

      I made these yesterday for the first time for my husband and his family and they were a huge hit! My husband requested I make these each time I cook potatoes for dinner from now on! lol Glad to hear they freeze well too. I will definitely have to try it out as I’m halfway through my second pregnancy and looking for dishes I can make ahead and freeze. I wasn’t prepared the first time around as baby #1 came pretty early! Thanks Cassie for the great recipes!!

      These are perfect to freeze! I do the first bake, prep and then put into food saver bags…….into the freezer until dinner time and a quick & easy night of cooking when it’s a busy week night and you are cooking using the oven. They are work but more so on the prep side of things.

      PS: it’s easy also to mix up your ingredients for the stuffing portion of the recipe. I always add garlic in there too!
