Zesty Chicken & Potatoes

- 6 Boneless, Skinless Chicken Breasts
- Chopped Fresh Chives (optional)
- 1/2 tsp pepper
- 1/2 cup mayonnaise
- 3 tbs. dijon mustard
- 2 cloves of garlic, minced
- 1lb potatoes, cut into fourths
1. Heat oven to 350F and spray a large baking dish with cooking spray.
2. Place chicken and potatoes in dish. In a small bowl, mix remaining ingredients (except chives) and then brush over chicken and potatoes.
3. Bake for 30-35 minutes or until juice of chicken runs clear and potatoes are tender. Sprinkle with chives.
