I just wanted to share this recipe with you. Richard and I wanted pancakes for breakfast the other day but we were all out of the boxed mix. So, what did we do? We found some recipes online, took some ideas from one, some ideas from another – you get the point. Long story short, we made our own pancake mix and IT WAS DELICIOUS.

Ingredients:
- 1 1/3 Cup Milk
- 1 1/2 Cups Flour
- 1/2 Teaspoon Salt
- 2 Tablespoons Butter, Melted
- 1 1/2 Tablespoons Sugar
- 1 Egg
- 3 1/2 Teaspoons Baking PowderInstructions:
1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter. Mix until smooth.2. Heat a lightly oiled frying pan over medium-high heat. Pour the batter into the pan, using approximately 1/4 cup for each pancake. Brown on both sides. Enjoy!
This recipe makes 8 pancakes.
























These look very yummy, I only make mine from scratch with whole wheat flour, I dont had sugar but I do add a few chocolate chips. My kids love them.

I’ve never made them from a mix either! I only use whole wheat flour (usually spelt) and if you use maple syrup on them, you can also leave out the sugar completely, no one is the wiser. If that scares you, use a mashed ripe banana. A dash of vanilla is a nice treat as well.
I always make them from scratch, as well as waffles. Delicious.
