  • Fluffy Pancakes Recipe

    I just wanted to share this recipe with you. Richard and I wanted pancakes for breakfast the other day but we were all out of the boxed mix. So, what did we do? We found some recipes online, took some ideas from one, some ideas from another – you get the point. Long story short, we made our own pancake mix and IT WAS DELICIOUS.

    Fluffy Pancakes

    Fluffy Pancakes Recipe


    • Makes 8 pancakes.

    Ingredients:

    - 1 1/3 Cup Milk
    - 1 1/2 Cups Flour
    - 1/2 Teaspoon Salt
    - 2 Tablespoons Butter, Melted
    - 1 1/2 Tablespoons Sugar
    - 1 Egg
    - 3 1/2 Teaspoons Baking Powder

    Instructions:

    1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter. Mix until smooth.

    2. Heat a lightly oiled frying pan over medium-high heat. Pour the batter into the pan, using approximately 1/4 cup for each pancake. Brown on both sides. Enjoy!

      I use a close version of this recipe but was finding that my pancakes were never quite as fluffy as I’d like them. So this past weekend I told my girls “we’re going to try something a bit different to see if we can have fluffier pancakes!” So I upped the baking powder quantity closer to what you have … and the response … “Mommy WOW what super fluffy pancakes!” lol Just the response I wanted … thanks Cassie :)
      Thanks also to teachermum … I will be (secretly) trying the mashed banana alternative as well!

      I will make these. I just have to speak up about the Pancake mixes. When my son was young I always had a box of Complete Pancake Mix on hand. He loved Pancakes and that was the easy way to just make up 2 pancakes for him whenever he wanted them. One day he wanted pancakes and I opened a brand new box of mix, poured some into the bowl and it was moving!!! EEEEK!!! Tiny wee white worms!!! They were through the whole box and not just a few! I was mortified that if I hadn’t seen the mix move I probably would have mixed it up and cooked those worms up for my son!!!!!!!!!!!!! Then I wondered if I had fed him worms in the boxes before that! From that day forward all of our pancake were made from scratch. He is 27 now and out on his own and he makes his own pancakes from scratch. It was Aunt Jemima Complete. I always bought the same brand. If you have some in your cupboards please look very closely. Use a magnifying glass! Make sure there’s nothing hiding!

      These look very yummy, I only make mine from scratch with whole wheat flour, I dont had sugar but I do add a few chocolate chips. My kids love them. :)

      I’ve never made them from a mix either! I only use whole wheat flour (usually spelt) and if you use maple syrup on them, you can also leave out the sugar completely, no one is the wiser. If that scares you, use a mashed ripe banana. A dash of vanilla is a nice treat as well.
