Greek Quinoa Salad
- Servings: 4
- 1 Cup Quinoa, Cooked
- 1/2 Seedless Cucumber, Chopped
- 1/2 Cup Cherry Tomatoes, Sliced in Half
- 2 Teaspoons Basil
- 1 Tablespoon Fresh Mint, Minced
- 1 Tablespoon Lemon Juice
- 2 Tablespoons Olive Oil
- Salt & Pepper, to Taste
- 1/2 Cup Feta Cheese, Crumbled
- Add all ingredients to a large bowl.
- Set aside for 10-15 minutes, to allow the flavours to combine.
