Healthy Strawberry Muffins

These muffins have been a favourite of mine for years now. I try to make them weekly when strawberries are in season – they are so good!

They’re healthy (around 100 calories each, depending on the size), delicious and super easy to make.

Healthy Strawberry Muffins Recipe

  • Makes 12 muffins.


  • 1/2 Teaspoon Baking Soda
  • 2 1/2 Cups Oats
  • 3/4 Cups Sugar (or Splenda, to make them healthier)
  • 1 Cup Greek Yogurt, Plain
  • 2 Eggs
  • 1 1/2 Teaspoon Baking Powder
  • 2 Cups Strawberries, Diced


  1. Preheat oven to 400F. Spray muffin tins with cooking spray or line with foil liners (not paper).
  2. Add all ingredients, except strawberries, to your food processor and blend until smooth. Pour into a bowl and gently fold in 1 1/2 cup of the strawberries.
  3. Divide mixture evenly into your muffin tins. Top each muffin with additional diced strawberries.
  4. Bake for 25 minutes, or until a toothpick comes out clean.

    You can purchase Coconut sugar at Metro, Longo’s & Wholefoods…it’s a little pricier but I think it’s worth it for the health benefits. It doesn’t taste like coconut at all – just sweet and nutritious…great way to give yourself and the kids some great tasting, healthy treats without the guilt! Replace the sugar in any recipe to a 1:1 ratio.

    Do you have to use a food processor or could you mix by hand?

    Cindy: You want to get the oats as smooth as possible, so a food processor is best. Alternatively, you could use a blender, but it may not work as well.

    Hand mixed definitely does not work. Used the blender the second try and added blueberries (didn’t have enough strawberries left) Really good 🙂 thanks for the recipe.

    Just made a batch of these, very yummy! But is the temp and time above correct? Luckily I peeked at mine 15 minute in and they were done!

    Jennifer: It was 25 minutes at 400 with my oven. It may be less time if you have a better oven than me!

    How come I can’t use quick cooking oats? Also would it work if I used honey for the sweetener?

    Why wouldn’t quick cook oats work? That’s all I have. 🙁 I’m so bummed because I was all ready to make them.

      The last time I used them they didn’t work well, but I just added a bit more this morning, and they worked fine. So you can use them! 🙂
