    Healthy Strawberry Muffins

    These muffins have been a favourite of mine for years now. I try to make them weekly when strawberries are in season – they are so good!

    They’re healthy (around 100 calories each, depending on the size), delicious and super easy to make.

    Healthy Strawberry Muffins Recipe


    • Makes 12 muffins.

    Ingredients:

    • 1/2 Teaspoon Baking Soda
    • 2 1/2 Cups Oats (NOT Quick-Cooking)
    • 3/4 Cups Sugar (or Splenda, to make them healthier)
    • 1 Cup Greek Yogurt, Plain
    • 2 Eggs
    • 1 1/2 Teaspoon Baking Powder
    • 2 Cups Strawberries, Diced

    Instructions:

    1. Preheat oven to 400F. Spray muffin tins with cooking spray or line with foil liners (not paper).
    2. Add all ingredients, except strawberries, to your food processor and blend until smooth. Pour into a bowl and gently fold in 1 1/2 cup of the strawberries.
    3. Divide mixture evenly into your muffin tins. Top each muffin with additional diced strawberries.
    4. Bake for 25 minutes, or until a toothpick comes out clean.

      Cindy: You want to get the oats as smooth as possible, so a food processor is best. Alternatively, you could use a blender, but it may not work as well.

      You can purchase Coconut sugar at Metro, Longo’s & Wholefoods…it’s a little pricier but I think it’s worth it for the health benefits. It doesn’t taste like coconut at all – just sweet and nutritious…great way to give yourself and the kids some great tasting, healthy treats without the guilt! Replace the sugar in any recipe to a 1:1 ratio.

      Just made these, they were awesome!! My new favourite recipe!! Only I didn’t pay attention to instructions saying no paper liners. Opps! Next time just in oiled muffin tin.
      By the way where do you get coconut sugar from?

      Strawberries and oatmeal-yum! Almost like my breakfast every morning though I add vanilla and cinnamon to it! I’ll try them with half that amount of brown sugar-my usual trick! Usually works. I’d even leave it out altogether and put a very ripe banana in.

      You could try coconut sugar…one of the healthiest sweetners…low GI and rich in vitamins and minerals!

      Don’t eat splenda, it’s garbage and super unhealthy! If you’re using dry sugar you can use cane sugar or demerara sugar.

      These look fabulous. Thanks for sharing, Cassie. I will add chopped dark chocolate (for the health benefits of course, ha ha) . Remember to use half the amount of sugar when using Splenda.
