Lemon & Herb Rice Recipe


We are big rice eaters in this house (we prefer it over potatoes), and this is one of those side dishes that never gets old.

The flavour of this rice is so mouth-watering, I can eat a bowl of it just on it’s own – but we usually serve it with meat (any kind works well) and fresh veggies.

It couldn’t be easier to make this recipe, either. Who says delicious food has to be difficult to make?

Ingredients:
- 1 1/2 Cup Basmati Rice
- 3 Cups Chicken Broth
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Pepper
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1/4 Cup Lemon Juice
- 1/2 Teaspoon Rosemary
- 1/2 Teaspoon Basil

Instructions:
1. Add rice, lemon juice, chicken broth, salt, pepper, basil, rosemary, garlic powder and onion powder to a large pot.

2. Bring to a boil and then cover and reduce heat to low. Cook, covered, for about 20 minutes.

Makes 3 servings.

    I will sure try this. Also, you might want to check out Indian/Pakistani grocery stores for basmati, as it’s their staple they often have it on sale.

    This is fantastic. And for people worried about the cost of basmati, may I suggest buying it at bulk barn!!

    hannasmom: You can use either, but I usually use bottled as it’s less expensive.

    Heather: Basmati or Jasmine would work, I don’t think it would be very good with plain long grain. We only buy Basmati to make this one dish.. we use long grain white for pretty much everything else.

    I add thyme and oregano to either basmati or jasmine rice. very yummy!!!

    I don’t normally have Basmati rice on hand…although I like it more than long grain, it’s more expensive to keep in my pantry. Would long grain would be okay with this?

    Do you use bottled lemon juice for this? I wonder if the flavor would be too strong?

    It’s a fish night tonight and we re having rice, so I’ll give it a try! Thanks……..

    I often use lemon juice and add a bit of creamy goat cheese, so this will be something new.
