Oatmeal Goji Berry Chocolate Chip Muffins

Servings: 12 Muffins

Ingredients:

  • 1/2 Cup Rolled Oats (Whole)
  • 1 2/3 Cup Rolled Oats (Processed into Oat Flour)
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1 Cup Sugar (I used Coconut Sugar)
  • 1/4 Teaspoon Cinnamon
  • 1/2 Cup Goji Berries
  • 2/3 Cups Boiling Water
  • 2 Tablespoons Coconut Oil
  • 2 Tablespoons Lemon or Orange Juice
  • 1/2 Teaspoon Lemon or Orange Zest
  • 1 1/2 Teaspoon Flax Seeds
  • 1/2 Teaspoon Vanilla
  • 2/3 Cup Milk (I used Almond)
  • 1 Small Banana, Mashed
  • 1/4 Cup Whole Wheat Flour
  • 1/3 Cup Chocolate Chips

Instructions:

  1. Preheat oven to 350F. Line your muffin tins or spray with non-stick cooking spray.
  2. To a small bowl, add goji berries, boiling water, coconut oil, orange or lemon juice, orange or lemon zest and vanilla. Soak until goji berries are very tender, about 10 minutes.
  3. Process your 1 2/3 cup rolled oats in a food processor or blender until they are a crumbly flour-like texture. Transfer to a large bowl.
  4. Add goji berry mixture to the oat flour and mix gently until combined. Add mashed banana, milk, whole wheat flour, and chocolate chips. Again, mix until well combined.
  5. Add batter to muffin cups and bake for 15-18 minutes.
