    Pasta Dinner
    Yesterday’s lunch: Meaty Spinach & Ricotta Pasta

    We’re so excited to have our new barbecue! Any excuse to use it is a good one. Unfortunately, I am terrified of using a barbecue. I don’t know why. I just always envision it blowing up when I go to turn it on.

    So, until I conquer that fear, Richard is the one that does the barbecuing around here. Thankfully, he doesn’t mind.

    Breakfast:

    3x Cold Cereal
    Homemade Oatmeal with Strawberries & Honey
    Homemade Oatmeal with Apples
    Eggs, Sausage, Toast, Fruit
    English Muffin, Strawberry Banana Fruit Drink

    Lunch:

    2x Mac n’ Cheese
    Deli Meat Sandwich, Salad
    Baked Potato, Strawberry Banana Fruit Drink
    3x Leftovers

    Dinner:

    Barbecued Pork Back Ribs, Mashed Potatoes, Broccoli & Cauliflower
    Pasta with Homemade Pasta Sauce
    Chicken with Creamy Mustard Sauce, Couscous, Peas
    Shredded Chicken Salad
    Burger, Salad with Balsamic Vinaigrette
    Parmesan Chicken & Vegetables, Roasted Potatoes
    Cheeseburger (on the barbecue), Salad
    Sweet & Spicy Bacon Chicken, Potato Rings, Salad

    Dessert/Snacks:

    Fruit
    Crackers
    Cheese Sticks/Slices
    Popcorn
    Homemade Sticky Buns

      M – Bacon Veggie Alfredo (used up leftover vegetables in fridge)
      T – Hamburgers and Salad
      W – Crockpot Lasagna
      T – Pork Chops Baked Potatoes Corn
      F – Sandwiches or Leftovers

      We’re trying to save on hydro by not using the oven for cooking during the week since TOU billing started here May 1st. My goal (at least for spring/summer) is to try and use just BBQ or crockpot for dinners.

      My dinner plan:

      M: chicken breast, potato salad, green bean salad
      T: cobb salad with avocado and eggs
      W: bean and rice burrito with cheese
      T: ground chicken on top of pasta with tomato sauce and veggies
      F: baked spring rolls, tofu and veggie stir fry

      BBQ is for the men around here!

      Tomatoes, broccoli, cauliflower, carrots, cucs, mushrooms, peppers, strawberries were on sale and watermelons have arrived! That sets the menu.

      Lunches are usually leftovers and fruit for snacks.

      Tues: leftovers-should use up all the bits and pieces
      Wed: chicken fried rice
      Thurs: tomato/broccoli/tuna pasta salad
      Fri: beef roast with potatoes and carrots
      Sat: cauliflower soup with leftovers to take for Soup Sunday at church the next morning
      Sun: Stuffed peppers with cucs and dip
      Mon: likely enough leftovers to feed everyone

      I had to smile: I have the SAME fear (I envision burnt hair and eyebrows for some reason) – BUT men LOVE to BBQ – so you don’t need to worry :) (Menu plan seems yummy!)

      barbecuing saves on hydro too!! (especially since the price goes up as of tomorrow). My husband is the one who is scared of the barbecue so I do most of the cooking (he does bacon & eggs once in a while or spaghetti).

      Too funny…I have the same fear. Hubby does all the BBQing.

      Hi Cassie,

      I have a bag of spinach, italian sausage defrosted and ricotta in the fridge, wondering if you could tell me how to make the sauce for the Meaty Spinach Ricotta pasta. I was going to do stuffed shells without meat with spinach and ricotta, but I know my husband would much prefer meat in it LOL.

      Hey Cassie, Thats what a bbq is for….dad’s turn to cook! Don’t overcome your fear too soon…its a good excuse to sit back and enjoy the little ones more while dad makes dinner. I even get hubby to make the turkey on the bbq for Thanksgiving and Christmas…it keeps my oven somewhat cleaner. Take care. Penny :)
