Soft Pumpkin Cookies Recipe


After getting over my pumpkin phobia, I have been trying many more pumpkin recipes in the kitchen. This one is probably one of my favourites that I’ve come up with.

I don’t usually enjoy cake-like cookies, but these are super soft and just melt in your mouth… so delicious. We brought a big container of them to a Halloween party and they were a big hit!

Ingredients:
Cookies:
- 2 1/2 Cups Flour
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 2 1/2 Teaspoons Cinnamon
- 1/2 Teaspoon Salt
- 1/2 Cup Butter, Softened
- 1 1/2 Cups Sugar
- 1 Cup Pumpkin Puree
- 1 Egg
- 1 1/4 Teaspoon Vanilla Extract

Icing:
- 2 Cups Icing Sugar
- 3-4 Tablespoons Milk
- 1 Tablespoon Butter, Melted
- 1 1/4 Teaspoon Vanilla Extract

Instructions:
1. Preheat oven to 350F.

2. Combine cinnamon, salt, flour, baking powder and baking soda in a small bowl. Mix well.

3. In a medium bowl, cream together sugar and butter. Add egg, vanilla and pumpkin and mix together. Add in dry ingredients. Mix well.

4. Roll cookies into balls in 1 tablespoonful and add to cookie sheet. Flatten each ball slightly before baking.

5. Bake for 18 minutes or until the edges are a light brown colour.

6. Cool completely.

7. While the cookies are cooling, combine milk, icing sugar, melted butter and vanilla. Add in the milk as needed. If you want the icing to be thicker, you would add less milk.

8. Drizzle icing onto your cookies and let the, site for about 15 minutes, or until the icing has hardened slightly.

Makes 30 cookies.

    Thanks for the recipe, these are super, I added an extra pop to the drizzle, 1 tsp pumpkin pie spice really makes them fabulous ! Looking forward to trying more of your recipes. Thanks again.

    Wow, these cookies are delicous! I could only find pumpkin filling, with spices, but they came out wonderful, pumpkin puree is not nessesary. Also, I used margarine instead of butter since butter is so darn expensive, and they came out the exact same. Note that the “cookie dough” is super soft, but its supposed to be, so dont add anything to make it hold together more, just refridgerate it. I baked them for 15 minutes, instead of 18 minutes. They are soft and sweet, and before I put the icing on they tasted okay, and I wasn’t sure if I was going to make another batch, but the icing totally tops them off. They would be a fantastic christmas cookie! I am very impressed. Very easy too! I am defintely making these again soon, they are now my favorite! These are a great hit. Thanks for the recipe!!!

    MMmmmm I just made a batch of these with some company over and they are already almost half gone! (and this makes a nice big batch ) I am sooo in love with this recipie! mmmmmmm they do not even need the icing.

    Thanks! I was looking for just such a recipe, we had fantastic ones at a huge pumpkin farm/fair in the US last year and I was wanting to make some, but didn’t know how to go about looking for a recipe, you’ve solved my problem! Going to make some in the next coupel of days, yum!

    sandra: Definetely not the stuff for pies. Either the puree in the can or homemade puree would be fine.

    I have basically the same recipe, they are delicious! I really like the icing idea, I have not done that yet. Another idea that I always do is substitute half of the butter for apple sauce. They turn our great and besides a little apple flavor, you would never know.

    This sound really good and easy to make… on the pumpkin puree is that real pumpkin or can you use pumpkin filling which would have the spices in it

    My mouth watered reading the recipe! I love all pumpkin things. There are lots of recipes for cakes, breads, ,cookies, and cheesecakes. Pumpkin cheese cakes are AMAZING!

    Wow that looks like a great recipe and the pic helps show how very yummy they look. I just made some cookies this morning. My daughter is all grown up and out of the house now, my new man loves sweets and I’m not much of a sweets person. Suppose that’s why I can’t bake well. I’m slowly making cookies and finding new recipes that are differant. This looks like a great one. I’ll try it next week. Thanks for sharing.
