  • Toasted Bagel, Fruit Smoothie
  • Hash Browns with Veggies

Lunch

  • Picnic Lunch
  • Zucchini, Lentils and Millet with Basil-Avocado Pesto Sauce
  • English Muffin Pizzas, Veggie Sticks
  • Leftovers x2
  • Pasta with Roasted Veggies
  • Almond “Tuna” Salad

Dinner

  • Falafel Salad
  • Veggie Chili
  • Thin Crust Pizza
  • Indian “Butter” Cauliflower (instead of butter chicken)
  • Lentil & Cauliflower Tacos
  • Roasted Veggies Over Couscous, Creamy Stuffed Potatoes
  • Pasta with Meaty (but meatless) Sauce & Spinach

Snacks/Dessert

  • Fruit
  • Popcorn
  • Cheezy Kale Chips
  • Fruit Smoothies
  • Almonds, Walnuts, Cashews
  • Veggies with Hummus
  • Cranberries

    Not sure if you’ve tried the chickpea “tuna” salad – it’s also a good vegan alternative :)
