    I am starting up with menu plans again and let me tell you, it feels so good to have a plan for what we’re going to eat. After going 3 weeks without any plans, I am very happy to be back on track with my menus again.

    Breakfast:

    Homemade Oatmeal with Honey & Strawberries
    Homemade Oatmeal with Apples
    Banana Oatmeal Smoothie x2
    Cold Cereal x2
    Hard Boiled Eggs, Fruit

    Lunch:

    Chicken Kabobs with Peanut Sauce, Carrot & Celery Sticks, Cheese Stick
    Buttermilk Chicken Salad
    Hard Boiled Eggs, Toast, Fruit
    Tuna Pitas with Celery
    Fruit Salad, Toast with Peanut Butter, Cheese Stick
    Leftovers x2

    Dinner:

    Easter Dinner with In-Laws
    Chicken Strips, Carrot & Celery Sticks, Mashed Potatoes
    Grilled Chicken with Spinach & Couscous, Green Beans
    Minestrone Soup
    Shredded Chicken Salad
    Meaty Spaghetti
    Shredded Rotisserie Chicken, Mashed Potatoes, Peas & Carrots

    Snacks/Desserts:

    Homemade Potato Chips
    Fruit Salad
    Healthy Peanut Butter Balls
    Easter Chocolates

      Here is a link to the recipe (I hope this is okay, the recipe is too long to type out). The best part of this recipe is that, other than the green beans which should prepped first, the entire dinner can be prepped as you go. This recipe is delicious, even my toddler and preschoolers love it.

      Good for you Cassie! I was just saying to my hubby that we need to change up our meal plan as it’s gotten boring….and you have all given me some great ideas. Heather, I would love to know how you make your Thai coconut curry.

      Those oatmeal packets sound truly enticing. I make my 17 month old daughter baked oatmeal at the beginning of the week as well as muffins (this week was blueberry zucchini) but those packets sound wonderful. Especially when she can take them to grandma’s house when she sleeps over. Thank you for the food ideas and inspiration.

      Also hope you’re enjoying your time with your newest addition :)

      Our weeknight dinners have to be quick and easy because hubby cooks with a 3.5 year and 13-month old under feet. This week’s dinners:

      Thai coconut curry
      Chicken cordon bleu
      Peameal on a bun
      Beef & bean burritos
      Tilapia

      Congrats on the arrival of your baby girl! Life with two is very, very different than with one, but somewhere along the way it becomes twice the fun.

      We only plan dinners so…
      French onion soup
      Swedish meatballs with cous cous
      Marinated(one rubbed) grilled pork tenderloin with grilled veg
      Beef tacos
      Grilled mushrooms with chicken and polenta
      Saturday??
      Pesto risotto with BBQ chicken and veg

      After each of my three kids were born, close friends and family made us meals for 2 weeks!! It was such a blessing & so helpful!!

      The best thing anyone can do for a family with a newborn is take them food and drop the food off at the door without expecting to go in for a visit!

      please post the Banana oatmeal smoothie recipe. I make a smoothie with yogurt and bananas, but would like to add some fiber to it

      If you can cook everyday with a newborn, let alone maintain a website… my hat goes off to you!

      Whats your secret?

      For the first 2 months with my daughter, I cooked ‘big meals’ – ie. sunday i would cook a large lasagnia and a big pot of soup that would last us for 4-5 days.
