CHEESY MASHED POTATOES
Ingredients:
- 5 large potatoes (yukon gold works well, but any kind will do)
- 1/3 cup plain cream cheese
- 1/4 cup milk
- 1/2 cup shredded cheese (marble, mozarella or cheddar)
- Parsley
- Salt
- 6 tbs. Butter
Instructions:
1. Boil potatoes until tender. Drain and add to large mixing bowl. Mash with a potato masher until no large chunks remain.
2. Add plain cream cheese, milk, butter, parsley and salt to potatoes and mix with a hand mixer on low for about 30 seconds.
3. Add shredded cheese and mix for another 30 seconds.
4. Enjoy!
