CHICKEN PARMIGIANA
Ingredients:
- 3/4 cup bread crumbs
- 3/4 cup parmesan cheese
- 4 chicken cutlets
- Salt + Pepper
- 1 large egg, lightly beaten
- 2 cups tomato sauce
- 1/4 cup olive oil
- 4 mozarella cheese slices
Instructions:
1. Heat broiler. Combine breadcrumbs and parmesan cheese in a shallow bowl. Season both sides of chicken with salt and pepper. Dip chicken in beaten egg, then dredge in breadcrumb mixture.
2. Spread tomato sauce onto the bottom of a baking dish. Heat oil in a large skillet over medium heat. Place chicken in skillet; cook until golden, 2-4 minutes on each side. Transfer to baking sish - onm top of sauce.
3. Top each cutlet with cheese. Broil about 4 inches from heat source until sauce is hot, 5-8 minutes. Serve immediately.
