CREPE CAKE WITH STRAWBERRIES & BLUEBERRIES

Ingredients:
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
- 1 pint strawberries
- 1 pint blueberries
- 3 tbs. honey
- 1/4 cup slivered almonds
- 1 can whipped cream (you don't have to use it all!)



Instructions:
1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Remove to plate. Make about 8 crepes, allow to cool completely.

4. Mix strawberries, blueberries and honey in a medium skillet on medium heat, for about 5-10 minutes, until berries are soft but not mushy. Mix in slivered almonths.

5. While berries are softening, you can put together the cake! Place one crepe on a serving platter, add a dollop of whipped cream and spread out evenly. Add another crepe and dollop of whipped cream. Continue until you have used all 8 crepes. Put a layer of whipped cream on top of the cake, and pour berries, sauce and slivered almonds over cake. Enjoy!
