TWICE BAKED POTATOES
Ingredients:
- 4 large potatoes, washed
- 1/4 cup vegetable oil (or canola, sunflower, olive)
- 3/4 cup shredded cheese
- 1/2 cup sour cream
- 2 green onions, sliced
- 4 pieces of bacon, cooked and crumbled
Instructions:
1. Pre-heat oven to 450F. Rub potatoes in vegetable oil and place on a baking sheet. Bake for about 1 hour.
2. Slice cooled potatoes down the centre and scoop out the insides. Place the insides in a bowl and add sour cream, 1/2 cup cheese, green onions and bacon. Mix together.
3. Fill potato shells with potato mixture. Sprinkle with cheese and bank for 10-15 minutes or until cheese is melted. Enjoy!
